Plain Flour

Sugar

2 Medium Apples

Milk

Butter

Raisins

2 x Eggs

Vanilla Extract

Ground Cinnamon

Baking Powder

Baking Soda

Salt
INSTRUCTIONS
1. Preheat oven to 175°C
2. Grease and flour a 9-inch springform baking pan.
3. Sift the flour, baking powder, baking soda, ground cinnamon and salt into a medium bowl. Set aside.
4. In a large bowl, beat the butter and sugar until light and fluffy.
5. Add eggs, one at a time, beat well after each addition.
6. Add vanilla extract and beat until just combined.
7. Gradually add the dry ingredients and milk to the wet mixture.
8. Pour cake batter into prepared baking tin. Set aside.
9. Wash and cut apples in half
10. Remove the core
11. Cut apples into thin slices.
12. Start in the centre of the cake, arrange the apples in a circular pattern by pushing the base if the apple slices into top of the batter.
13. Sprinkle the raisins and ground cinnamon over the top of the cake.
14. Bake in preheated oven for 40-45 minutes or until a skewer comes out clean when inserted into the centre of the cake.
15. Remove cake from oven and let it cool in pan for 10 minutes.
16. Remove sides of tin and leave on base to cool and for the cake to firm up.
17. Once cool, remove from base and put on serving plate.
18. Optional: Dust with icing sugar before serving.
