There's nothing like the smell of freshly baked bread.

Divide batter into 12 equal portions for fresh bread rolls or roll dough as 1 large piece and bake for 45 minutes in a loaf tin for fresh bread.

Bread can be frozen for 3 months once baked.

INSTRUCTIONS

  1. Mix yeast, sugar and warm water in a small bowl until yeast dissolves.
  2. Cover with cling wrap; stand in a warm place for 10 minutes or until mixture becomes frothy.
  3. Sift bread flour and salt into a large bowl.
  4. Warm milk in microwave for 60 seconds.   
  5. Melt butter in microwave for 30 seconds.
  6. Add butter, milk and yeast mix to flour and salt mix.
  7. Use spatula to mix into a soft dough.
  8. Sprinkle rolling mat with plain flour.
  9. Transfer dough onto rolling mat.
  10. Knead dough on a floured surface for 10 minutes or until dough is smooth and elastic.
  11. Use pastry brush to coat large mixing bowl with oil.
  12. Place dough into oiled bowl. Cover with cling wrap.
  13. Rest dough in a warm place for 1 hour or until it has doubled in size.
  14. Preheat Oven to 200°c
  15. Oil a 20cm x 25cm baking tray.
  16. Turn dough onto a rolling mat.
  17. Knead for 1 minute or until smooth.
  18. Divide dough in 12 equal pieces.
  19. Roll each piece into a ball.
  20. Place dough balls in prepared baking tray.
  21. Cover with plastic wrap.
  22. Stand in a warm place for 20 minutes or until dough has doubled in size.
  23. Dust top with 1 Tsp plain flour.
  24. Bake for 25 minutes or until the rolls sound hollow when tapped.
  25. Leave to cool slightly before removing from tray.
  26. Enjoy warm with a dollop of butter.
