INSTRUCTIONS
- Place 1 Cup dried fruit and 1 Cup hot water in small mixing bowl.
- Leave fruit to soak for 15 Minutes.
- Drain the fruit well and use your hand to squeeze out any extra water. Discard water and set fruit aside.
- Sift 3 cups bread flour, 1/4 cup caster sugar, 1/2 tsp nutmeg, 1 & 1/2 tsp cinnamon, 1 & 1/2 tsp dried yeast, 1/2 tsp ginger, 2 tsp mixed spice and 1/4 tsp salt into a large bowl.
- Add 3 tbsp Vegetable Oil
- Add 1 &1/4 Cup hot tap water.
- Mix ingredients with spatula to combine.
- Pour the dough onto a rolling mat, add plain flour to stop it sticking to the mat.
- Knead for 5 minutes.
- Add mixed fruit.
- Knead till fruit is combined.
- Use pastry brush to coat inside of large bowl with 1/2 tbsp vegetable oil.
- Return the dough to the bowl.
- Cover with clean tea towel and leave to rise for 60 minutes.
- De-gas the dough by pushing the air out with your hand.
- Pour the dough onto the rolling mat, use your hand to push into a square shape.
- Line a 30cm x 20cm square dish with baking paper.
- Cut the dough into 12 equal pieces.
- Roll each piece into a ball.
- Place dough balls into lined baking tray.
- Cover baking tray with tea towel and let rise for 30 minutes.
- Mix 1 tbsp plain flour and 1/2 tbsp water into a paste for the cross.
- Put paste into a piping bag. After the dough has risen, pipe crosses on the dough.
- Preheat Oven to 180°
- Bake in pre-heated oven for 20 minutes or till the tops are golden brown.
- Make Sugar glaze for top of buns. 1 tbsp Mix caster sugar and 1/2 tbsp hot tap water in small bowl until sugar has dissolved.
- As soon as the hot cross buns have come out of the oven, use pastry brush to coat the buns with sugar syrup.
- Enjoy hot with a dollop of butter.
