Ingredients

2 Chicken Breast

Mustard

Crushed Garlic

Lime

Snow Peas

Baby Spinach Leaves

Cherry Tomatoes

Small Avocado

Fresh Basil Leaves

Small Red Onion

Olive Oil

Balsamic Vinegar
INSTRUCTIONS
1. Juice the lime into a medium bowl.
2. Put mustard and garlic to lime juice and mix well.
3. Cut chicken breasts into slices.
4. Put chicken in the bowl with to marinate, set aside.
5. Fill a small saucepan with water.
6. Put on stove on medium heat and bring to the boil.
7. Add snow peas and cook for 3 minutes.
8. Remove the snow peas and put into cold water to cool, set aside.
9. Heat grill plate or BBQ plate to hot.
10. Cook chicken for 5 minutes.
11. Turn and cook for a further 5 minutes or until cooked through.
12. Remove chicken from heat and set aside to rest.
13. Cut the tomatoes on half.
14. Peel and slice the avocado.
15. Roughly slice the basil leaves.
16. Cut the onion into thin slices.
17. In a large bowl add snow peas, spinach leaves, tomatoes, basil, avocado, onion and avocado.
18. Add olive oil and balsamic vinegar and gently toss.
19. Arrange salad on serving plate.
20. Place the chicken over the top of the salad.
21. Serve immediately.
