Ingredients

Self Raising Flour

3 x Zucchini's

5 x Eggs

1 Cup Grated Tasty Cheese

1 x Onion

Olive Oil

INSTRUCTIONS

1.  Preheat oven to 160°C. 

2.  Grate zucchini, make 3 cups. 

3. Place zucchini in paper towel and squeeze the excess moisture from zucchini.

4. Discard excess zucchini juice. 

5. Grate 1 cup tasty cheese. 

6. Put grated cheese in bowl with zucchini.

7. Remove fat and rind from bacon and cut into 1cm pieces. 

8. Add to zucchini mix.

9. Dice onion into small pieces.

10. Add diced onion to mix.  

11.  Add 1/4 Tsp Salt and Pepper to mix.

12.  Add 1 Cup Self Raising Flour to mix. 

13.  Mix all ingredients together. 

14.  Add 1/2 Cup oil.

15.  Add 5 eggs to mix.

16.  Mix well. 

17.  Line baking dish with baking paper. 

18.  Add zucchini mix to baking dish. 

19.  Bake in preheated oven at 160°C for 40 minutes.

20.  Once baked remove from baking dish, cut into 12 slices and enjoy.
